[23] Om een lampreye te maken ende te bereydene dye [24] salmen met heeten water ende met hoye hair huyt af [25] schueren ofte haer lijm ende wasschense wel schoone [26] dan suldi nenem* een mes ende snijtse onder beyde hair [27] ooghen ende laetse bloeyen ende dan braetse ende droep[28]se met haren bloede dus legse in scotelen ende es bereet


[23] To make and prepare a lamprey. [24] One shall remove its skin or slime [25] with hot water and hay and wash it well clean [26] then you shall take a knife and cut it under both its [27] eyes and let it bleed and then roast it and baste [28] it with its blood[;] so lay it in dishes and it is ready.
