[29] Thus shall one purify and skim the honey. [30] Take half a pint of fine white honey and put it [31] in a pannikin on the fire and let it come to the boil three or [32] four times. Then set it off the fire and take a [G3r] spoon; with it skim all the scum off the top. [2] And put this clear, purified honey in a [3] pot. One shall use [honey] like this in the aforesaid ypocras and in the [4] clareyt.
