[29] Aldus salmen suyueren dat zeem ende schuymen [30] Neempt een half pinte finen witten zeem ende doeten [31] in een panneken op dat vier ende latet sieden drie ofte [32] vier wallen Dan settet vanden viere ende neempt ee[G3r]nen lepel dair mede scuymet wel bouen al den scuym [2] af Ende dien claren ghesuiuerden zeem doet in eenen [3] pot aldus salment orboren inden ipocras ende inden [4] clareyt voerseyt.

[29] Thus shall one purify and skim the honey. [30] Take half a pint of fine white honey and put it [31] in a pannikin on the fire and let it come to the boil three or [32] four times. Then set it off the fire and take a [G3r] spoon; with it skim all the scum off the top. [2] And put this clear, purified honey in a [3] pot. One shall use [honey] like this in the aforesaid ypocras and in the [4] clareyt.
