One may also make it thus

[22] Men maecht oock maken aldus. Als datmen dye [23] queappelen siet in azijn van wijne ende oock in wijn [24] tsamen Dan maeckt dit cruyt goeden apetijt. Ende [25] eest v te suete oft dat ghi den honich sparen wilt Soe [26] neemt wit broot ende bernet so ment int swert peper [27] doet Dan suldijt weycken ende duerslaen doer eenen [28] doec Ende nemen dit half totten honich Dit machmen [29] oock in compost doen ende oock in alle dynghen daer [30] men veel honichs in behoeft Maer niet veel van dat [31] broot. Want anders sout gheraken te beschimmelen

[22] One may also make it thus. When one boils [23] the quinces in wine vinegar and also in wine [24] together, this dish gives a good appetite. And [25] if it is too sweet for you or you wish to save honey, so [26] take white bread and toast it as one puts in black peper [sauce]. [27] Then you shall soften it and pass it through a [28] cloth. And replace half the honey with this. One may [29] also do this in compost and also in all things where [30] one should put in much honey. But not much of the [31] bread. Because otherwise it will encourage mould.
